CMI 2006

The 2006 Culinary Management Institute was hosted by Executive Chef Uwe Rudnick and the Culinary Team at the Adam's Mark Hotel--Dallas. Among other activities, students demonstrated their culinary talents at the Chaparral Restaurant on the hotel's 38th floor overlooking downtown Dallas.


CMI 2005

The Disneyland Resort co-sponsored the 2005 Culinary Management Institute. Hosted by the Vice President of Food Services for all of Disneyland, the CMI experience revolved around Disneyland's 50th Anniversary. Culinary Management Institute participants toured the facilities and worked in teams to come up with a solution to a case study situation provided by the food service management team at Disneyland.
