Sunday, April 13
11:30 a.m. - 3:00 p.m.
Students will travel to The Capital Grille, award winning fine dining restaurant in Buckhead, Georgia. The Capital Grille visit will include a tour of their restaurant/kitchen facilities, a culinary demonstration and a discussion about the business side of a successful culinary career with a focus on the fine dining segment.

Students will also receive an orientation to the remaining Institute activities, and will receive the Culinary Challenge project and team assignments. This will include the details about their culinary creation for Monday and the case study for the marketing plan presentation on Tuesday.
Monday, April 14
8:00 a.m. - 2:00 p.m.
Each Culinary Challenge team will create and present their culinary creation at Avanzare Steaks, the Hyatt Regency's fine dining restaurant and one of downtown Atlanta's finest restaurants. The spectacular 1,800-gallon salt-water aquarium will provide a unique backdrop to the Culinary Management Institute experience.

Tuesday, April 15
8:00 a.m. - 2:00 p.m.*
Each Culinary Challenge team will create a marketing plan to be presented to a panel of Industry professionals, based on the case study that will be presented and explained to all contestants on Sunday.
* Exact presentation time for each team will be announced on Monday.
Culinary Management Institute (CMI)
The Culinary Management Institute includes dynamic culinary demonstrates, seminars on the business of culinary arts, and the famous Culinary Challenge team competition that combines culinary and business skills. Students may register individually OR as a 3-person team. Individual registrants will be teamed up with students who will complement your skills.

Take the Culinary Challenge! A unique competition testing both your culinary ability and your business acumen. Participants will develop and produce a signature culinary item that meets the business criteria presented in each year's challenge.
In addition to creating samples of the product for a taste test, challenge participants will also present their business plans for:

- Target Market Characteristics & Product Selection
- Cost & Pricing
